Red Velvet Pancakes with Cream Cheese Glaze

I have decided to start a new tradition for Valentine’s Day.  I am going to make red velvet pancakes for breakfast each year for Lucas and Ke’alohi.  Now, this recipe is no where near as good as Cinnamon’s back home, but it will do the trick and satisfy my craving for Red Velvet.  I tried out this recipe, that I found on Pinterest, and loved how they came out and will probably be looking out for more holidays and reasons to make these.

Ingredients for Red Velvet Pancakes:
  • 1 1/2 Cups All-Purpose Flour
  • 2 Tablespoons Sugar
  • 2 Teaspoons Baking Powder
  • 1 Tablespoon Cocoa Powder
  • 1 Teaspoon Salt
  • 2 Eggs
  • 12 Ounces Buttermilk
  • 4 Tablespoons Butter, Melted and Cooled Slightly
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Vinegar
  • 2 Teaspoon Red Food Coloring
Ingredients for Cream Cheese Glaze:
  • 4 Ounces Cream Cheese, Softened
  • 1 Cup Powdered Sugar
  • 1 Teaspoon Vanilla
  • Milk, A Couple Drops to get Consistency to Drizzle
  • Chopped Pecans, To Garnish (Optional)
Directions for Red Velvet Pancakes:
Mix together all dry ingredients until well incorporated.  Add wet ingredients and mix until you get a batter-like consistency.  Heat griddle and cook pancakes to desired size and consistency.
Directions for Cream Cheese Glaze:
In a small mixing bowl, mix the cream cheese, powdered sugar, and vanilla together until smooth.  Add a couple drops of milk and beat until incorporated and glaze has a consistency of a drizzle.  Spoon glaze over hot, fresh pancakes and serve.
