Homemade Meatballs

This is a first from me because I am putting one of my own recipes on here!  I love watching the Food Network channel and I remember one time watching Anne Burrell making her own meatballs and I was in awe.  I knew that I wanted to make my own but I didn’t want to have to use a ton of ingredients to do so.  My motto now that I am a mom is to “KEEP IT SIMPLE,” and these are so easy to make that I can do them in about 20 minutes from start to finish.

Ingredients:
  • 2 Tablespoon Extra-Virgin Olive Oil
  • 1 Large Shallot, Diced
  • 2 Cloves Garlic, Minced
  • 1 Pound Ground Beef
  • 2 Eggs
  • 1/2 Cup Grated Parmesan Cheese
  • 1 Tablespoon Italian Seasoning
  • 1/2 Cup Breadcrumbs
  • Salt & Pepper
Directions:
Heat non-stick pan with 1 tablespoon of extra-virgin olive oil and add diced shallot and minced garlic.  Saute for 2 minutes, until both are slightly soft.  In a medium mixing bowl, add ground beef, eggs, parmesan cheese, Italian season, breadcrumbs, salt and pepper and mix well.  Add cooked shallots and garlic to mixture and mix until well combined.  In non-stick pan, heat remaining tablespoon of extra-virgin olive oil.  Drop little balls of meat mixture into hot pan; I use a small cookie scoop to make them.  Cook until meat is fully cooked through and serve with pasta and marinara sauce!  Enjoy!
