Homemade Strawberry Ice Cream

I love ice cream!  It was always a favorite time of mine when I was a little kid and I saw my dad bring down the ice cream machine.  This machine wasn’t like the machines we used today or they have in stores, it was OLD.  All I remember about the machine, was that it was like a large wooden barrel that had big bowl/bucket in the middle that would turn in circles.  When you put the bowl/bucket in the barrel, you would have to put ice and rock salt around it so that the cream would get cold and turn into ice cream.  My favorite ice cream to make with my dad was cookies and cream because we both loved oreos and he would let me crush the oreos which was so much fun.  We had a ton of left over strawberries so we decide to bring out the ice cream maker our friend Jenn gave us at our wedding and make strawberry ice cream, which is Lucas’ favorite.

Ingredients:
  • 1 1/4 Cups Whole Milk
  • 2 3/4 Cups Heavy Cream
  • 3 Cups Strawberries, Diced
  • 4 Tablespoons Freshly Squeezed Lemon Juice
  • 1 1/2 Cups Sugar
  • 1 1/2 Teaspoons Vanilla Extract
Directions:
In a small bowl, combine the strawberries with the lemon juice and 1/2 cup of the sugar.  Stir gently and allow the strawberries to macerate in the juices for 2 hours.  Strain the berries, reserving juices.  Mash or purée half the berries.
In a medium mixing bowl, use a hand mixer on low speed to combine the milk and remaining granulated sugar until the sugar is dissolved, about 1 to 2 minutes.  Stir in the heavy cream, reserved strawberry juice, mashed strawberries, and vanilla.  Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 to 25 minutes.  Five minutes before mixing is completed, add the reserved sliced strawberries and let mix in completely.  The ice cream will have a soft, creamy texture.  If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours.  Remove from freezer about 15 minutes before serving.

    Wow! That looks great! I remember when I first met your Grandpa Bill. He was always in charge of making the homemade ice cream. Now his ice cream maker was really old. He hand-cranked his ice cream. We all wanted to help until it was almost done. All of a sudden, we would all leave Grandpa to turn the crank because it was just too hard. Those ice cream days were the best! And let’s face it. Nobody makes better dairy products to make ice cream then AE Dairy in Des Moines, Iowa!
